Junior Sous Chef, Peruvian Fine Dining Restaurant
We are looking for a talented Junior Sous Chef for a busy Peruvian fine dining restaurant in central London.
Open for lunch and dinner 7 days a week the restaurant serves cutting edge Peruvian and Latin American cuisine with contemporary Mediterranean influences. Dishes will include ceviche, tiraditos, cazuela, fresh fish and seared meats from the grill with the focus on fresh produce and innovative presentation whilst staying true to the culture and cuisine of the region. Everything is prepared in-house from scratch, so this kitchen is always busy. Standards throughout are high.
As Junior Sous you will be expected to organise your own prep, run your section during service, supervise other staff and work elsewhere in the kitchen as directed by the Head Chef. This will include some kitchen management duties
Required: Qualifications / Skills / Experience
- Passion and enthusiasm for food and quality,
- Relevant experience in a busy fresh food environment.
- Up to date with modern cooking techniques
- Creative flair & attention to detail
- Keen to learn
- Team player with a strong work ethic
The ideal candidate will be a reliable and self-motivated professional chef with strong all-round kitchen skills and a “can do” attitude to work. Michelin star experience would be an advantage but cooking to 2 AA Rosette standard (minimum) is essential.
Previous experience of Peruvian cuisine is not essential
Interviews will include a cooking trial
