I am looking for a talented Head Chef for a new restaurant opening in central London in September. Menus will be authentic Caribbean cuisine from Trinidad & Tobago with the focus on real food from the islands. Dishes will include Roti, Doubles, Pelau and Aloo with everything prepared in-house from scratch.

There will be a 40-cover restaurant, bar and terrace and the restaurant will offer a full take-away/delivery service too.

As Head Chef you will be responsible for all aspects of the day to day running of your kitchen including:

  • All food production, stock management & wastage
  • Compliance with all statutory regulations and legislation
  • Staff training & retention
  • Food safety & hygiene
  • The kitchen budget and GP

The ideal candidate will be a solid all-round chef with a real passion for Caribbean cuisine specifically with experience of Trini cooking and culture. An understanding of kitchen management is also desirable.

Previous experience of new openings would be an advantage
