Head Chef Brewery, Taproom & Kitchen
This well-respected and much-loved East London craft beer microbrewery is looking for a new Head Chef to take charge of the kitchen as they reopen for outdoor service from April 12th. This is more taproom, bar and kitchen than restaurant and there is excellent covered beer garden for outdoor service. The kitchen features an open theatre cookline and includes a chef’s table/counter dining for use as lockdown restrictions are lifted. The menu, focused on the local community, is modern bistro/gastro pub style and includes a strong vegetarian and vegan offering as well as the house classics. At weekends there is a particularly busy all-day brunch trade.
The brewery mills their own grain and source as much as possible from within walking distance so responsible food provenance, sustainability and seasonality are all very high on the agenda resulting in a unique space that has a deep connection with the neighbourhood.
As Head Chef you will be responsible for all aspects of the day to day running of your kitchen including.
- All food production and menu development
- Purchases, stock management & wastage
- The kitchen budget & GP
- Food safety and hygiene
- Compliance with all statutory regulations and legislation, including Covid regulations
- Maintaining a 5* hygiene rating
We are looking for an enthusiastic Head Chef with good experience of the local dining scene in East London, up to date with current industry trends and strong on kitchen management, someone who will take pride in ensuring that the kitchen is clean and tidy at all times and is prepared to make a full commitment to work with the owners to drive the business forward.
This position might suit a strong Sous Chef ready for his/her 1st Head Chef role. Pre-opening duties will include setting up the kitchen, creating a new menu, training staff etc
Salary: £35,000 to £40,000 including a bonus scheme
