Firmly established on the local dining scene, this unique all-day venue is seeking a competent and self-motivated Head Chef to take charge of the kitchen and make a major contribution to the continued growth of the business over the next few years.
Listed in the Good Food Guide, Hardens and winner of a Taste of Kent Award, menus are seasonal, ingredient-led modern Bistro style. The owners are passionate about local, seasonal produce and have long-standing relationships with Kent’s best and most respected suppliers. All food is prepared on site and cooked with integrity from a small but well-organised kitchen. Home smoking, nose to tail butchery and dayboat fish all feature.
As Head Chef you will be responsible, and accountable, for all aspects of the day to day running of your kitchen including:
- Purchases, Stock Management & Wastage
- All food production
- Menu development
- Staff training,
- Food Safety & Hygiene
- Kitchen Budgets & GP
You will be a solid professional with strong all round kitchen skills including butchery, the preparation of fresh fish, sauce, stove and pastry work. You will have several years’ experience in a similar busy fresh food environment as Head Chef or Senior Sous. You will be a well organised, even-tempered and customer focused chef. Leading by example you will build a professional, efficient and enjoyable kitchen environment with the patience and commitment to train and mentor your brigade. You must be a good team player capable of working closely with the “hands-on” owner and prepared to roll your sleeves up, as this kitchen is always busy.
You will have a keen eye for detail and a sound understanding of and interest in current food trends. A proven track-record in kitchen management including a thorough understanding of kitchen budgets and GP’s is essential.
Salary: £35,000 to £45,000
