This family run group of boutique hotels with restaurants is looking for an Executive/Group Head Chef to streamline the food estate, fine tune the brand standard and improve kitchen performance across the company. With outlets in London, Oxfordshire, Bristol, Sussex and Cornwall the hotels all have their own style and menus ranging from town house hotel to village gastro pub with rooms. Catering for breakfast, brunch, lunch and dinner guests as well as private functions and events, most kitchen teams are small, produce is locally sourced, and menus change with the seasons. The successful candidate could be based at any of these locations, ideally working as Head Chef in that hotel, but ready to travel across the South to visit and collaborate with all the Head Chefs in the group.

Main responsibilities.

  • Manage the day-to-day operation of your own kitchen as Head chef.
  • Work closely with all the chefs in the group to improve kitchen performance in all areas.
  • Review all menus and kitchen procedures.
  • Upskill chefs to ensure quality and consistency of food and service.
  • Create and implement a kitchen operation manual for the company.
  • Review all food costings, procurement, and profit margins.
  • Manage the company food estate to improve efficiency.

We are looking for a professional chef with good multi-site experience, strong kitchen management and excellent people skills. Someone who can work closely with the owners to really drive the processes that make the restaurants a profitable success. Someone who can support and inspire the company Head Chefs to improve the kitchen operations and raise the standard of food across the brand but still enjoys the buzz of a busy service cooking fresh local seasonal food to order.

5-day week

Salary: £50,000 to £60,000 + travel allowance
