HEAD CHEF MODERN BISTRO IN FRANCE
Set in the picturesque villages of South West France and in the final stages of a major refurbishment this brand-new modern bistro, grill and wine bar is looking for a competent and enthusiastic Head Chef with a real passion for food to play a key role in this exciting new restaurant project.

The restaurant will seat up to 65 with a covered terrace and bar, serving innovative modern bistro food to a high standard in a casual fine dining setting. The menu will showcase local and seasonal produce and will include home smoked meat and fish, plat du jour, tapas style dishes for sharing with innovative options for vegan/vegetarian diets too.

Leading a small team you will be responsible and accountable for all aspects of the day to day running of your kitchen including all purchases, food production, hygiene, staff, stock and the kitchen budget.

Pre-opening
You will be required to

• Contribute to kitchen planning & equipment
• Set up all kitchens/purchase utensils etc
• Create menus
• Recruit and train staff
• Source suppliers
• Design & Implement the kitchen operating system

Role
• Head of Department:
• Run the kitchen day-to-day
• Manage the kitchen team
• Create menus to delight customers and achieve commercial targets
• Work with the Owners to achieve the business’ objectives:
• Ensure compliance with all statutory regulations & legislation.

The Candidate
The ideal candidate will have several years experience in a similar busy fresh food kitchen as Head Chef or Senior Sous with a sound knowledge of both contemporary and classical cuisines. You will have a proven track-record in kitchen management including a thorough understanding of kitchen budgets and GP’s with previous experience of new openings.

You must be capable of working within set budgets and company financial targets and be competent operating a robust kitchen management system in line with EU legislation.

Leading by example you will build a professional, efficient and enjoyable kitchen environment with the patience and commitment to train and mentor your brigade.

This is a demanding hands-on role that offers a dedicated chef the opportunity to have a real impact on the growth of the business right from the start.

Previous experience working in France and a good level of spoken French would be an advantage
