HEAD CHEF MODERN BISTRO IN FRANCE
The restaurant will seat up to 65 with a covered terrace and bar, serving innovative modern bistro food to a high standard in a casual fine dining setting. The menu will showcase local and seasonal produce and will include home smoked meat and fish, plat du jour, tapas style dishes for sharing with innovative options for vegan/vegetarian diets too.
Leading a small team you will be responsible and accountable for all aspects of the day to day running of your kitchen including all purchases, food production, hygiene, staff, stock and the kitchen budget.
• Contribute to kitchen planning & equipment
You must be capable of working within set budgets and company financial targets and be competent operating a robust kitchen management system in line with EU legislation.
Leading by example you will build a professional, efficient and enjoyable kitchen environment with the patience and commitment to train and mentor your brigade.
Required: Qualifications / Skills / Experience
This is a demanding hands-on role that offers a dedicated chef the opportunity to have a real impact on the growth of the business right from the start.

Previous experience working in France and a good level of spoken French would be an advantage
